Ingredients
2 broccoli heads cut into pieces stems trimmed
2 cups toasted cashews crushed *to taste
1 cup dried cranberries
1/2 red onion finely chopped
1/2 cup mayonnaise
1/4 cup hot water

Directions
Place broccoli, onion, cranberries, and cashews in a salad bowl.
Mix the mayonnaise with the hot water in a separate bowl and stir in the salad ingredients.
Cover and allow to rest until cold.

Wash the cashews in salt water, drain them a little then roast them in the oven for about 20 minutes until golden/dark brown.
