For the Salad:
1 cup quinoa, rinsed
2 cups water
1 cup fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped
1 cup cherry tomatoes, diced
1 cucumber, diced
1/2 cup Yellow Bell pepper
1/4 cup red onion, finely diced
1/4 cup green onions, finely sliced
1/2 cup crumbled feta cheese (optional)
For the Dressing:
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 garlic clove, minced
Salt and pepper to taste
Directions
Cook the Quinoa:
In a medium saucepan, bring 2 cups of water to a boil.
Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
2. Prepare the Vegetables:
While the quinoa is cooking, prepare the vegetables. Finely chop the parsley and mint, dice the cherry tomatoes and cucumber, and finely dice the red and green onions.
3. Make the Dressing:
In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, minced garlic, salt, and pepper until well combined.
4. Assemble the Salad:
In a large mixing bowl, combine the cooked quinoa, chopped parsley, mint, diced tomatoes, cucumber, bell pepper, red onion, and green onions.
Pour the dressing over the salad and toss gently to combine.
If desired, add crumbled feta cheese for an extra burst of flavour.
Serve
Transfer the quinoa tabbouleh salad to a serving bowl.
Serve immediately or refrigerate for an hour to allow the flavours to meld together. This salad can be enjoyed cold or at room temperature.
