This No-Bake Key Lime Pie, recipe is a creamy and refreshing summer delight favourite: Made with a graham cracker crust and a light lime filling, it is guaranteed to be a hit at any event.
Ingredients
For the crust
6 tbsp. melted butter
12 graham crackers
1/3 c. brown sugar
For the filling
1 14-oz. can of sweetened condensed milk
12 oz. cream cheese
1/2 key lime juice
3/4 heavy cream
2 tsp. Freshly grated lime zest (from 1 lime)
Whipped cream and lime zest, for serving

Serves: 6 - 8
Directions
For the crust:
1. In the bowl of a food processor, combine the graham crackers and brown sugar. Process for about a minute, or until very finely ground. While the processor is running, gradually add the melted butter. Grind the crumbs until they resemble coarse sand in texture. Transfer to a 9-inch pie plate with a thick rim. Press the crust into the pan's bottom and up the edges using the bottom of a measuring cup. Firmly pack and create a crust that is a uniform thickness. Freeze it for 30 minutes.
For the filling:
2. Using the whisk attachment on a stand mixer, whip the heavy cream until firm peaks form.
Transfer to a different bowl, then save for later.
3. Along with the cream cheese, lime zest, and sweetened condensed milk, place them in the bowl of a stand mixer. Beat on medium-high speed for about 2 minutes with the paddle attachment, scooping down the sides and bottom of the bowl as necessary, until the mixture is smooth and well-combined. Slowly add the key lime juice while the mixer is running at low speed. When everything is thoroughly blended, increase the speed to medium. Take out and carefully fold in the whipped cream after removing it from the stand mixer.
4. Spoon the filling into the pie crust. Refrigerate for 12 hours.
5. Garnish with extra whipped cream and lime zest to taste.
Cooking Tip
Key lime juice gives traditional Key Lime Pies their drab yellow hue, but green variants may have food coloring added to the filling. Persian limes or bottled lime juice can be substituted for key limes if they are unavailable.
Try adding cream cheese to the pie for more richness, or top it with sweetened whipped cream to make it more special.
To ensure that the pie sets properly and doesn't become too runny, it must be chilled.
Before serving, chill it for at least 12 hours.
To add a little extra flavor and texture, sprinkle some finely chopped nuts or toasted coconut on top of the whipped cream before serving. You can also experiment with adding different flavors to the crust, such as cinnamon or almond extract. For a fun twist, try using mini tart pans to make individual key lime pies.
