Classic Strawberry Pie

A classic strawberry pie with a buttery, flaky crust, fresh strawberries, and a sweet, tangy gelatin filling.

Strawberry Pie


For the Pie Crust:

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon sugar

  • 1/2 cup unsalted butter, chilled and cut into small pieces

  • 3-4 tablespoons ice water



Ingredients for the Filling:

  • 1 cup granulated sugar

  • 3 tablespoons cornstarch

  • 1/4 teaspoon salt

  • 1 cup water

  • 1 (3 oz) package of strawberry gelatin (Jell-O)

  • 1 quart fresh strawberries, hulled and halved



Directions

  1. Make the Pie Crust:

  2. Preheat your oven to 425°F (220°C).

  3. In a large bowl, combine the flour, salt, and sugar.

  4. Add the chilled butter pieces and cut them into the flour mixture using a pastry blender or fork until the mixture resembles coarse crumbs.

  5. Gradually add ice water, one tablespoon at a time, and mix until the dough comes together.

  6. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  7. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim the edges.

  8. Line the crust with parchment paper and fill with pie weights or dried beans.

  9. Bake for 15 minutes, then remove the parchment paper and weights and bake for an additional 5-7 minutes, or until the crust is golden brown. Let it cool completely.


2. Make the Filling:

  • In a medium saucepan, combine the sugar, cornstarch, and salt.

  • Gradually stir in the water, mixing until smooth.

  • Cook over medium heat, stirring constantly, until the mixture boils and thickens.

  • Remove from heat and stir in the strawberry gelatin until completely dissolved. Let it cool to room temperature.



3. Assemble the Pie:

  • Arrange the hulled and halved strawberries in the cooled pie crust.

  • Pour the cooled gelatin mixture over the strawberries, ensuring they are evenly coated.

  • Refrigerate the pie for at least 4 hours, or until the filling is set.


TIPS

  • Add some whipped cream to top up your pie if desired before serving.

  • Use the freshest strawberries you can find for the best flavour.

  • Ensure the gelatin mixture is completely cooled before pouring it over the strawberries to avoid wilting them.
