Ingredients


  • 4 firm pears (Bosc or Anjou work best)

  • 1 bottle of dry red wine (Cabernet Sauvignon or Merlot)

  • 1 cup of sugar

  • 1 cinnamon stick

  • 3 cloves

  • 1-star anise

  • 1 vanilla pod (or 1 tsp vanilla extract)

  • Zest of 1 orange

  • Zest of 1 lemon

  • 2 cups of water



Directions


  1. Prepare the Pears:

    • Peel the pears, leaving the stems intact for presentation. Carefully core the bottom of each pear to remove the seeds.

  2. Create the Red Wine Syrup:

    • In a large saucepan, combine the red wine, sugar, cinnamon stick, cloves, star anise, vanilla, and citrus zest. Add the water and bring the mixture to a boil, stirring to dissolve the sugar.

  3. Poach the Pears:

    • Reduce the heat to low and gently place the pears into the saucepan. Ensure the pears are fully submerged in the red wine liquid. Cover with a lid and simmer for 25-30 minutes, turning occasionally for even coloring.

  4. Check for Doneness:

    • The pears should be tender but not mushy. Use a knife to check; it should slide easily into the flesh.

  5. Cool and Serve:

    • Remove the pears and allow them to cool slightly. Increase the heat and reduce the poaching liquid until it thickens to a syrup-like consistency.

    • Pour the red wine reduction over the pears before serving. Garnish with extra citrus zest or a dollop of whipped cream for an added touch of decadence.
