Vanilla Cake with Vanilla and Blueberry Frosting

This heavenly creation combines the classic flavours of moist vanilla cake with a luscious frosting infused with the sweetness of fresh blueberries.

Ingredients:

For the Vanilla Cake:

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 cup buttermilk


For the Vanilla and Blueberry Frosting:


  • 1/2 cup unsalted butter, softened

  • 3 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1/4 cup fresh blueberries, mashed or pureed

  • Additional fresh blueberries for garnish (optional)


Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

  9. While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy.

  10. Gradually add the powdered sugar, beating until smooth and creamy.

  11. Stir in the vanilla extract and mashed/pureed blueberries until well combined.

  12. Once the cakes are completely cooled, place one cake layer on a serving plate or cake stand. Spread a layer of the vanilla and blueberry frosting over the top of the cake layer.

  13. Place the second cake layer on top and press down gently.

  14. Use the remaining frosting to frost the top and sides of the cake.

  15. Optionally, garnish with additional fresh blueberries on top of the frosting for an extra burst of flavour and colour. Slice and serve your delicious Vanilla Cake
